Someone – I forget who – left a comment on a blog post asking for more cooking write ups. Okay, here you go!
Our two grandsons come over for a hang and dinner almost every Thursday night. It’s been fun as their tastes mature we can cook dishes more interesting than bow tie pasta. Back in 2020 I posted about this incredibly simple BevCooks sweet chili chicken dish that has three ingredients: boneless/skinless chicken thighs, honey, and sweet chili sauce. I wanted something simple like that but with a different sauce; when we went to Victoria, B.C. with the Mattilas in September we had Moo Shu Pork – which I hadn’t had in ages – and I thought the kids would like the sauce with some chicken. Boy did I go down a rabbit hole. I knew we’d have to get some vegetables on our plates so I ended up with a whole stir fry situation. I found this recipe on the Cafe Delites site; it definitely has more than 3 ingredients.
Let’s get into it. As you can see from the ingredients it’s pretty straight forward. Start some rice so it will be done when the stir fry is complete.

When cooking stir fry it’s essential to have all your ingredients prepped before starting to actually cook.

The first step is to sauté the boneless/skinless chicken thighs in a bit of oil, then remove from heat and reserve.

Cooking broccoli and bell peppers in the wok is fun because the colors get so vibrant.

Then add back the cooked chicken and sauce; stir to combine.

The hoisin sauce clings and darkens everything, so the serving photo is a little weak.

Both our grandsons liked the dish; the 8 year old normally sits across from me so I took his picture.

I had one small problem with this dish. I thought my wok was seasoned but maybe not enough. The hoisin sauce has sugar and it just loved sticking to that hot carbon steel wok. I had to spend a lot of time scrubbing out the bits of carbonized sugar from the wok; which means I had to spend more time than usual to re-season it. I may get kicked out of the stir fry club, but I may just use a large nonstick skillet next time.
Rating: ★★★ 3 Stars: Good for family but not special enough for company. It is a pretty easy recipe to prepare so go for it!
