One pot pasta was in the zeitgeist over the winter. This meets the criteria. While it’s not restaurant quality, using one pot and cooking almost everything at one time means you can get an okay home-made dinner on the table quickly.

Last June for Father’s Day my two sons planned to take me to Roakes here in Portland. Unfortunately most of us were sick with COVID (we dodged it for two and half years) so we postponed it. For the next few months one of us was either sick or busy. So Coney Dogs were on my mind for months.

Green Thai Curry Chicken Soup
We went looking for a thick Thai curry dish and found a soup. This is a nice chicken soup with a bit of pleasant zing from the green curry paste. If you are looking for a variation on chicken soup, this is a worthy recipe. While the chicken soup was very flavorful, it didn’t scratch our curry itch.
